Same technique of basic sugar cookies, dressed up for Christmas. Take half the dough and mix ube powder, and slightly knead the dough together, just like play dough, and cut out shapes. Easy and fun way to make cookies!

To make Sugar cookies
In a stand mixer with a paddle attachment, beat the butter and sugar until light and fluffy. Add the eggs one at a time. Beating each time until just combined. Add vanilla extract and beat until combined Add the flour, baking powder and salt to a separate bowl. Turn mixer back on, and mix until everything is combined. Once your mixer can’t do anymore, mix with your hands until you have a smooth dough. Separate dough into half and sprinkle ube powder into one, and knead until well incorporated. Create a marble effect, and wrap dough in plastic wrap. Refrigerate for about one hour or until firm enough to roll. Preheat oven to 350 degrees F (177 degrees C) and place rack in center of oven. Line your baking sheets with parchment paper. Remove one quarter of the chilled dough and, on a lightly floured surface, roll out the dough to a thickness of about 1/2cm using a floured rolling pin. Keep turning the dough as you roll, adding more flour if needed, making sure the dough does not stick to the counter. Cut out desired shapes using a lightly floured cookie cutter and transfer cookies to baking sheet. Place the baking sheets with the unbaked cookies in the refrigerator for a minimum of 15 minutes. This will help cookies retain their shape while baking. Bake at 350 degrees for around 8-14 minutes depending on the size of your cookies (start checking at 8 minutes or when you can beginning to smell the aroma of the cookies). Cookies will be done when edges are just starting to brown. Remove from oven and let cookies cool on baking sheet for a few minutes before transferring to a wire rack to finish cooling. |
