Toasting the walnuts with honey is an extra step not one not to be missed!! It was the star of the show, as the caramel from the candied walnuts, when within the batter, kind of spreads out into the banana bread and provides such an interesting mouth feel. Plus it prevents any raw tasting or soggy walnuts within the banana bread. I also used browned butter for maximum punch with the same ingredients. Definitely a recipe to try out.
