Another fun snack I made in college! Homemade adzuki red bean paste, with matcha pancakes for me and my roommates. In retrospect I really made a lot of Matcha desserts huh, must have really missed Asian flavors when I was at Hopkins… Try to use homemade azuki beans as well in order to control the sugar and texture to your desired preference! And feel to add in variations like chestnuts, orange peel, even had a version which incorporated some ume plum as well.
